The official name of this recipe is "Mexicali chop with crispy torilla strips and lime-cilantro vinaigrette". It comes from Ann Gentry's The Real Food Daily Cookbook. The main ingredients for the salad are pinto beans, black beans, romaine lettuce, cucumbers, corn kernals, roasted red bell peppers, celery, red onion, tomatoes, avocados, and corn torillas (to fry into tortilla strips). The Lime-Cilantro Vinaigrette is 1/3 cup red onion; juice of three limes; juice of two lemons; 2 T brown rice syrup; 2 T brown rice vinegar; 1 T coriander; 2 t sea salt; 1 1/2 t ground cumin; 1/4 t cayenne pepper; 1/2 cup extra virgin olive oil; 1 cup lightly packed fresh cilantro.
