ENCHILADAS

One night, two friends and I wanted Enchiladas. We began immediately, not needing a recipe. The only unconventional thing we did was use half enchilada sauce and half marinara. The results were impressive and we had a pan full of delicious enchiladas.

My moms enchilada sauce. very easy

Ingretients

Two Tomatoes
Two Onions
eight to twelve large garlic cloves
four large, guajillo or ancho peppers
(if you dont like it spicy take the seeds out
that is where the pepcin is )
three cups of water.
salt

Preparation

boil water, chop onions and tomatoes
and put everything in a pot
for extra zest sear the tomatoes over
flame.

stir till the tomatoes and onions are
virtually falling apart add water as
necessary.

blend at high speed
keep covered as much as possible to
prevent breathing or splashing in your eyes

goes well with a fresh white farmers cheese
like queso fresco.
