I have been way into collards lately and wanted to share my love of them with the world! My favorite involves:
Frying tofu in olive oil and garlic.
Sprinkling ground ginger to taste.
Adding black pepper.
Adding more minced garlic.
Stir frying until collards are cooked.
Adding sweet chili sauce last.
The above tastes great by itself, but also with whole wheat soba noodles or in a tortilla wrap with hummous. It is perfectly sweet and savory. I ate it at least six times in one week. Mmmmmf.
